ALL of our classes are full participation, so everyone learns how to perfectly create the special dishes. Plus techniques and time saving tips as well as the history of the dish and or ingredients are always featured.
We are accepting registrations for our on-line class, "All About Chiles" with over 40 lectures and 150 kitchen tested recipes. Our Tamale Rolling video is available for purchase. And we also have a tamale making kit available.
Our next day class is sold out very special class--a fun, fun class on red chile--the Red Chile Fiesta on Thursday, February 23 at 5 PM, followed by New Mexico Favorites at 5 PM on Thursday, March 9 featuring many of your favorites such as two Salsas, Red chile Beef and Green Chile Chicken Enchiladas, Flan and even Margaritas. Our next class is a very special class on 5 types of very different and delicious chilis where you'll learn the very interesting history of chili, our only truly national dish. The class is Chili, Chili, Chili on March 16 at 5 PM.
Our next weekend class is March 24 - 26, 2023 2023 Then we have another weekend class set for April 14 - 16, 2023. Our weekend and week long classes have been rated by Bon Appetit magazine and Gayot.com as the "Best in the US" for vacation cooking classes.
